Jim and his team investigated this further and discovered that many of the problems initiated from inadequate ice machine care and a lack of understanding in the correct handling and serving of ice. After months of development, he devised a cleaning process that enables his team to measure current levels of bacteria and to then carry out a proven cleaning process, in order to eradicate the dangers associated with bacterial presence in ice. The team also provide ongoing advice as to how to maintain the high standards required to meet the statutory demands laid out by the 2006 Food Hygiene Regulations.
